Vinaka Biscuits

Pre-amble:

Let Punjas help you say Thank You to your child’s teacher on UNESCO World Teachers’ Day on October 5th. All over the world a quality education offers hope and the promise of a better standard of living. However, there can be no quality education without competent and motivated teachers.

 

World Teachers’ Day is an opportunity to honour the women and men who inspire, challenge and nurture the next generation.

 

Our ‘Punjas Vinaka / Thank You Teacher Biscuits recipe is fun for all the family to join in with making and will make enough biscuits to decorate with the letters that make up the words ‘Thank You Teacher!”

 

Ingredients:

 

  • 300g Punjas Normal flour
  • 250g Anchor Butter (room temperature)
  • 125g caster sugar
  • ¼ tsp vanilla extract
  • 1 egg yolk
  • 75g custard powder
  • Grated zest of 1 lemon

 

To decorate:

 

  • 150g icing sugar
  • 5tsp water
  • Food colouring

 

Method:

 

  • Preheat oven to 180 C (160 C for fan assisted).
  • Grease and line two baking trays.
  • Mix the butter, sugar, lemon zest and vanilla in a bowl.
  • Stir in the egg yolk.
  • Add the flour and custard powder slowly and mix gently.
  • Use your hands to need the mixture into a dough.
  • Wrap in glad-wrap and chill for 15-20 minutes.
  • Lightly dust your kitchen surface with Punjas flour.
  • Roll the dough to 4mm thickness.
  • Cut out star shapes and place on baking trays.
  •  Bake for 10 minutes or until the biscuits begin to turn light brown at the edges.
  • Cool on a wire rack.
  • Mix the icing sugar with 5 tsp water and add a drop of your favourite food colouring.
  • Put icing mixture into a piping bag and ice each biscuit with a letter that together will spell out the words ‘Thank You Teacher’
